This recipe is a little different than some others we have done in the past, but we promise they are a delightful project to take on during a cloudy afternoon.
Before we get into it, many options were considered for the process of making a ‘nice loli’ as healthful as possible, but to get the texture you need, corn syrup was the option we chose.
A mixture of delicious honey, regular sugar, and corn syrup provided the best results. Also mind you this is NOT high-fructose corn syrup, just regular corn syrup which although is glucose, it doesn’t have the extra enzymes that break it all down to the fructose we try to avoid.
Get creative with these little honeys for a delightful Gal-entines gift or to spruce up your own tea time. We prefer to add a few drops of tincture or a nice bitters to our tea to make an herbal hot beverage sure to warm you up while we wait for the spring.

Herbs You Can Use (get creative):

- Rose Petals
- Chamomile
- Cloves
- Cinnamon Stick
- Lavender
- Star Anise

You can add whatever dried herbs you like for this depending on what your end uses are intended for.
WHAT YOU'LL NEED

- 1/2 cup honey
- 1/3 cup light corn syrup
- 1/2 cup granulated sugar
- 2 tablespoons water
- Dried Roses, Cloves, Star Anise (or whatever herbs you've chosen)
- Cinnamon Stick (you can also use regular lollipop sticks or popsicle sticks)
- Candy thermometer

WHAT YOU'LL DO

- In a saucepan add corn syrup, honey, sugar, and your water. Stir the mixture until incorporated
- Attach your candy thermometer to the pan
- Bring to a boil over medium-high heat, and then lower heat keeping at a rolling boil
- Continue until you reach 302°F
- As soon as your mixture reaches desired temp, remove from heat and carefully dunk the bottom of your a sauce pan into your ice bath tray until all bubbling stops, let cool for at least a minute
- Spoon your mixture onto wax paper in circle-shapes (make sure these are big enough to add your herbs, but small enough for a tea!)
- Add your herbs to your (soon to be lolis) as you wish, and place a cinnamon stick or a regular lollipop stick at the base
- Let cool completely and gently pull off paper
- Wrap in gift bags and voila!
